Sweet Pongal with coconut milk

- 1/2 cup Raw rice
- 2 tbsp moong dal
- 1 tbsp Ghee or as you need
- 1 tbsp Cashew nuts
- 1 tsp raisin
- 3/4 cup Coconut milk
- 3/4 cup Jaggery (adjust to your sweet level)
- 1/4 tsp Cardamom powder
- 1.5 cup water
- pinch of salt
Heat ghee and fry nut, raisin till it is brown and raisin puffed up. Take it out (including ghee)
In same pan roast Rice, Dal and pressure cook with pinch of salt and 1.5 cup of water till 3 whistle
Once you are able to open the lid and add jaggery, coconut milk , Cardamom powder. Cook till mixture get thicker
add fried nuts and required Ghee
Once done switch it off and enjoy!
Notes
- You can replace Moong dal with Chana dal
- Don't add more dal
- you can replace 50% of Jaggery with raw sugar or regular sugar if you are not a big fan of Jaggery
- My sis says sweet Pongal tastes good the next day
- My aunt eats sweet pongal with Lemon pickle (I never tried)
