Cutlet Pasta

Cutlet Pasta - is not any regular traditional pasta. it is rather fusion and more tuned to Indian taste.
The dish I have tasted had all Indian masala however my sons like Italian seasoning. So I have used the mix of Indian (from cutlet) and Italian spices. 
I have used macaroni in this recipe you can use your favourite type of pasta. Once I have used Red Lentil pasta but I prefer regular pasta types

Ingredients

For Sauce

  • 1 Onion sliced
  • 5 pods garlic chopped
  • 2-3 tomatoes chopped
  • 1 tsp oil
  • 1-2 tsp chili powder
  • 1/2 tsp turmeric powder

For Pasta

  • 2-3 cups cooked pasta cook per instruction on the pasta pocket
  • 1.5 cups Mixed vegetables (I have used carrot, cauliflower, beans)
  • 1.5 tsp Mixed Italian spice
  • 1.5 tsp Red chili flakes adjust to spice levels
  • 1 tbsp Coriander leaves
  • salt to taste

Instructions

  • Cook pasta per instruction on the box. Keep it aside
  • Heat oil in a pan. Add garlic, Onion and fry till transparent. Add tomatoes, salt and fry till mushy
  • Add turmeric, Chili powders and mix well. Fry for another 2 mins at low flame. Switch it off. Let it cool down. Grind to smooth paste
  • In the same pan add 1/2 cup of water, salt and vegetables. Cook it
  • Add grinded paste, 1/2 cup water. Mix well. Add cutlet in small pieces. Reserve few for garnishing. Let it boil.
  • Add red chili flakes and mixed Italian spices ( I have added in two batches). Mix well. Let it boil
  • Add cooked pasta mix well. Cook for another 3-5 mins. Add coriander leaves and reserved cutlet. Switch it off

Notes

  • I didn't add any cheese as felt the flavours won't go well. If you prefer add it at the end of course as much as you need
  • I have used homemade left over cutlets. You can use store brought vege patty. I have used vegetable cutlet with onion, garlic
  • I have cooked pasta per instruction on the package.
  • If you don't get mixed Italian herb you can use oregano, rosemary. Adjust to your prefference
