Tarkari pulao
Tarkari pulao is pretty famous in Karnataka. Tarkari pulav masala is very tasty and flavourful. It is done by grinding Mint, Coriander leaves with all the masala. Fresh grinded masala gives nice flavour to this rice.

For Masala
- 1/2 cup coriander leaves
- 1 handful Mint Leaves
- 1 inch Ginger
- 10 pods Garlic peeled and chopped
- 1/2 cup Coconut
- 10 Small onion
- 3-4 Green chilies adjust to spice level
For Tempering
- 1 clove
- 1 inch cinnamon
- 1 star anise
- 1 bay leaf
- 2 tbsp peanut
- 10 Curry leaves
- 1 tbsp oil
For Rice
- 1 cup Bastmati rice
- 2 cup Mixed vegetables (carrot, beans, cauliflower, peas)
- few Onion
- 1 Green chili optional
- 1 tomato chopped
- Salt to taste
- 2 tbsp fried onion optional
- 1 tbsp Coriander / Mint leaves finely chopped optional
Grind all the ingredients under tarkari palav masala section with 1/4 cup of water.
wash and soak rice for 10 mins. Heat oil and add all the tempering ingredients. Fry till nice aroma released. Add onion, green chili and Tomato and required salt and for a min.
Add grounded masala and fry till nice aroma released
Add all the vegetables, salt and required water. I have added 1.5 cup of water. Adjust salt and let it boil
Drain water from rice and add to the boiling mixture. Cook it till rice is done. If you are using pressure pan cook at medium flame for 2 whistles
Let it cool down. Once it is ready to open open the lid and mix well. Add peanuts , Fried Onion, coriander leaves & mint leaves. Mix well again. Serve hot with your favorite raita
