Besan flour sambar

Besan flour sambar is simple no onion, garlic and tamarind recipe. It goes well with idli, dosa and even steamed rice. If you are a beginner and wanted to start with something simple this is the recipe for you. In this recipe I have used Sattu flour but original recipe goes with besan flour.

Ingredients

For Temopering

  • 2 tsp Oil
  • 10 Curry leaves
  • 1 tsp Cumin seeds
  • 1/2 tsp Mustard seeds

For Sambar

  • 1 cup Vegetables
  • 2 Tomatoes
  • 3 tbsp Besan flour / Sattu flour

Masala Powders

  • 1 tsp turmeric powder
  • 1 tbsp Coriander powder
  • 1-2 tsp Chili powder

Instructions

  • Cut the tomatoes in the end like you see in pic. Blanch it for 3-5 mins in medium flame. Add all the vegetables continue to cook with salt. 
  • when skin soft enough remove tomatoes and when it cools down remove the skin and grind it to paste
  • Once vegetables are cook keep it aside till you need it. In a pan heat oil. Add mustard seeds, Cumin seeds and curry leaves. Let it crackle. Add grinded tomatoes.
  • Add all masala powder. Mix well. and add required water. Let it boil
  • Mix Sattu (besan flour) with 1/2 cup of water.  Add this to boiling tomato mixture mix well. Add cooked Vegetables with water too. Adjust salt. And continue to cook till raw smell of sattu (besan flour) goes off.
  • Add coriander leaves and let it boil for 30 sec. Switch it off.
  • Sambar ready!

Notes

  1. I wanted to make this as No Onion, Garlic sambar, You can add small onion and garlic after tempering till it is transparent. and follow the rest of steps
  2. Instead of Sattu flour use Besan flour
  3. Don't increase the besan flour it will become too thick. If it becomes thick add  hot water and boil before serving adjust salt accordingly
  4. You can use only potato in this
  5. Don't reduce the amount of Tomatoes as this gives the sour/ tanginess to the sambar

    2. Sattu having low sodium content can help manage your BP and regulate the circulation in the body.
    3. Sattu is best consumed as a summer cooler as it keeps your body cool
