Simple Besan Flour Sambar Recipe without Onion, Garlic, and Tamarind

Looking for a straightforward and delicious recipe? Try out the Besan Flour Sambar! It’s a no onion, garlic, and tamarind recipe that pairs well with idli, dosa, and steamed rice. It’s perfect for beginners who want to start with something easy. In this variation, I’ve used Sattu flour, but the traditional recipe calls for besan flour.

 

If you love trying different types of sambar, especially with idli and dosa, you’ll enjoy this recipe. I learned it from my mother when I had it at her place. She mentioned that it was passed down from my cousin. She prepared it specifically for Rava idli, but I served it with regular idli and brown steamed rice. Although I enjoyed both, my sons preferred it with idli.

 

This sambar is quite distinct from Bombay chutney due to the generous amount of tomatoes and spices used. I’ve added my preferred vegetables, but feel free to substitute with your own choices. Give this simple recipe a try and don’t forget to share your feedback!

Ingredients for making Besan flour sambar:

 

For Tempering

  • Oil – 2 teaspoon
  • Curry leaves – 10
  • Cumin seeds – 1 teaspoon
  • Mustard seeds – 1/2 teaspoon

 

Masala Powders

 

  • Turmeric powder – 1 teaspoon
  • Coriander powder – 1 tablespoon
  • Chili powder – 1-2 teaspoon (adjust to spice level)

 

For Sambar

 

  • Vegetables – 1 cup (Potato, carrot and beans)
  • Tomatoes – 2
  • Besan flour / Sattu flour – 3 tablespoon

Step by step instruction to make Besan Flour sambar:

 

Step 1: Cut the tomatoes in the end like you see in pic. Blanch it for 3-5 mins in medium flame. Add all the vegetables continue to cook with salt.

 

   

 

Step 2: when skin soft enough remove tomatoes and when it cools down remove the skin and grind it to paste

 

 

 

Step 3: Once vegetables are cook keep it aside till you need it. In a pan heat oil. Add mustard seeds, Cumin seeds and curry leaves. Let it crackle. Add grinded tomatoes.

 

 

Step 4: Add all masala powder. Mix well. and add required water. Let it boil. Mix Sattu (besan flour) with 1/2 cup of water.

 

 

Step 5: Add besan flour mixture to boiling tomato mixture mix well. Add cooked Vegetables with water too. Adjust salt. And continue to cook till raw smell of sattu (besan flour) goes off.

 

 

Step 6: Add coriander leaves and let it boil for 30 sec. Switch it off.

 

 

 

Step 7: Sambar ready!

 

Notes

 

  1. I wanted to make this as No Onion, Garlic sambar, You can add small onion and garlic after tempering till it is transparent. and follow the rest of steps
  2. Instead of Sattu flour use Besan flour
  3. Don’t increase the besan flour it will become too thick. If it becomes thick add  hot water and boil before serving adjust salt accordingly
  4. You can use only potato in this
  5. Don’t reduce the amount of Tomatoes as this gives the sour/ tanginess to the sambar
