Gatte ka Pulao – is a very famous Rajasthani dish. Garam flour is used extensively in Rajasthan as they don’t get vegetables throughout the year. It is a healthy and tasty one-pot meal. this is protein-rich pulao.

 

It is a unique variation of pulao where the rice is cooked with spiced gram flour dumplings called “gatte” instead of vegetables or meat. Gatte are made by combining gram flour (besan) with various spices and then steaming or boiling them.

 

Gatte is made from besan flour. You can prepare gatte beforehand and use it whenever you make rice. Gatte can be used for Subzi also. This is a handy recipe esp when you run out of vegetables or looking for different pulao than normal vegetable pulao. In some recipes I have see Gatte is fried before adding to the rice. If you want crispy Gatte shallow fry it before adding to rice.This is a perfect alternative for plain rice. You can serve Gatte me Pulao with your favorite raita

Ingredients for making Gatte Ka pulao

 

For Gatte

 

  • Gram flour – 1 cup
  • Ajwan – 1/2 teaspoon
  • Turmeric powder – 1/2 teaspoon
  • Red chili powder – 1/4 teaspoon (adjust to your spice level)
  • Yogurt – 2 tablespoon
  • Oil –  2 tablespoon
  • Salt to taste

 

For Rice

 

  • Rice – 1.5 cups (bastmati rice)
  • Ghee – 2 teaspoon
  • bay leaves – 1
  • Cumin seeds – 1 teaspoon
  • Cinnamon – 1 inch
  • Garam masala – 1/2 teaspoon
  • Red chili powder – 1/2 teaspoon (adjust to spice level)
  • Turmeric powder – 1/2 teaspoon
  • Onion – 1 (sliced thinly)
  • coriander leaves – 1 tablespoon (finely chopped)
  • Mint leaves – 10 (optional. I didn’t add)
  • Salt to taste
  • Ginger garlic paste – 1 teaspoon

Step-by-step instructions to make gatte ka pulao

 

Step 1: Wash and soak rice for 10 mins. drain it

Step 2: In a large bowl take all the ingredients under the Gatte section and make a smooth dough. Knead well for 3-5 mins to get smooth & soft dough

 

 


Step 3: Roll them into a long cylinder. Keep it aside. Heat water in a bowl. When it is boiling add Gatte and cook till it floating. 

 

   


Step 4: Once done remove it from water. Keep it aside. once it cool down slice it 

 


Step 5: Heat 2 teaspoon of oil and arrange Gatte in single layer and fry till it is browned all side.

 

 

 

Step 6: Heat ghee in a pan (to cook rice). Add bay leaf, cinnamon, cumin seeds. Let it crackle.  Add onion and salt for frying Onion. Fry till transparent. Add ginger garlic paste. fry for a min. Add turmeric powder, red chili powder, garam masala, washed mint leaves (if using) and fry for a min.

 

   


Step 7:  Add water (2.25 cup). Let it boil. Add rice & adjust salt

 


Step 8: Cook the rice by closing the lid. Once cooked add Gatte mix well. cook for another 2-3 mins. Add coriander leaves.  Mix gently

 

 


Step 8: Serve hot

  • You can add vegetables 
  • You can add rice of your choice instead of basmati
  • You can add roasted Cashew, raisins
