This recipe is new to me. I saw this at archanaskitchen some time ago when I was looking for a one-pot meal I have bookmarked because of cheese content as my sons are big fans of cheese. After that I checked on few pages too I kept postponing because of Peas in it. I have decided to try out but with some modification. I have replaced Peas with beans and carrot. also, I have grinded fried onion, garlic in ghee before grinding it. My family loved this.
Ingredients



Rice of your choice (I have used brown rice) – 2.5 cups (cooked)
Onion – 1 (Peeled and chopped)
Tomato – 1
Red chilli powder – 1/2 to 1 teaspoon (adjust to your spice level)
Ginger – 1 inch (Peeled and chopped)
Garlic – 5 pods (peeled and chopped)
Vegetable – 1 cup (I have used carrot and beans.)
Ghee – 1 tablespoon
Salt to taste
Mozzarella cheese – 30 g
Spring onion – 1/2 cup



Method:


Heat 2 teaspoons of ghee. Add Garlic, ginger and onion, salt fry till slight brown color.
Add red chilies powder fry for 30 sec. Add tomatoes and fry for a min

Switch it off and grind it with Mozzarella cheese

Heat 2 teaspoon of ghee and add vegetable and salt.. Cook it till 3/4th done. Add grinded paste and fry for a min or 2. Add spring onion and fry for 2 mins

Add cooked rice and required salt. Mix well. Cook for another 2 mins. switch it off

Serve hot
