Another dosa dish is the barley coconut dosa. This dosa is incredibly flavorful and does not require fermentation. Because this is not a fermented recipe, soak the rice/dal for a longer period of time, such as overnight or at least 6 hours. If you wish to ferment the batter, add it immediately before forming the dosa. It is not difficult to incorporate millets or whole grains into your diet.

 

In most dosa batters, you can safely substitute 50% millets or other grains for rice. You can experiment with ratios to discover a composition that is suitable for you and your family. 50% always works for me, especially when cooking dosas. I’ve never made idli with this batter. Ingredients for making Barley Coconut Dosa:

 

  • Barley – ½ cup 
  • Idli rice – ½ cup 
  • Urad dal – ¼ cup 
  • Fenugreek seeds – ¼ teaspoon 
  • Coconut milk – 1 cup 
  • Ginger – 1 inch
  • Green chili – 2-3 (As needed)
  • Salt to taste 
  • Oil to cook dosa (I have used coconut oil)

Step-by-step instructions to make Barley Coconut Dosa:

 

Wash and soak barley, idli rice, urad dal, fenugreek seeds together for 6-8 hrs. Grind barely, coconut milk, Green chili, ginger and salt.

Make sure the batter is in dosa batter consistency. Heat  dosa pan and pour the bater and spread to make dosa. Drizzle oil around it. 

 

 

 

 

 

Cook it  by closing it with lid. Turn it over and cook again. Once done remove it 

 

 

 

 

 

Serve with your favorite chutney 

 

Notes

 

  1. You can reduce the Barley and increase the rice proposition
  2. You can replace Rice with Millets like Kodo Millet
  3. You can omit ginger and green chilli
  4. You can use coconut oil to cook the dosa
  5. Finish the batter in the same day
