Sweet and spicy noodles
Sweet and spicy noodles is one of simpler recipe. These are really easy south east Asian-inspired Vegan Sweet, Spicy noodles. They’re a perfect balance of sweet from sugar and spicy from the gochujang. Noodles doesn't have to be unhealthy it is about the qty of noodles being used in the dish. For this recipe I have used Knife pare noodles for video and lost the final pics for that. So final pic is using different kind of noodles.

For Sauce
- 2 tbsp Sugar
- 1/4 cup gochugaru (Korean chili powder)
- 1 tbsp Gochujang chili paste
- 1 tsp Vinegar
- 1 tbsp Chili oil
- 1 cup water
- Salt to taste
For Noodles
- 2 tsp oil
- 1 cup Mixed vegetables of your choice
- 200 g knife pare noodles or any noodles of your choice
- 5 pods garlic peeled and chopped
Heat sugar, Water, gochugaru, Vinegar, salt & Gochujang. When it is boiling and turn little thick add chili oil. Keep it aside
Cook the noodles per instruction and keep it aside
Heat oil in a pan. Add garlic and fry till slight brown. Add all the vegetables, Soya sauce and salt. Let it cook
Add Cooked noodles and prepared sweet and spicy sauce. Mix well
Noodles ready to be served!
Notes
- Cook the noodles per instruction. 3/4 cooked noodles tastes better
- Adjust gochujang / sugar per your preference
- You can add pan fried tofu at the end to increase protein in the dish
- You can just add Mushroom to the noodles
