Creamy Lemon Corn Pasta - Vegan Pasta recipe
Creamy Lemon Corn Pasta is very rich and tasty recipe. It is pretty simple recipe with common ingredients. If you like the tanginess from Lemon then you will love this one. I love the fact that this recipe doesn't require any fancy ingredients and not even cheese yes you heard it right.

Servings: 4 people
- 1/2 cup Cashew (Soak in hot water for 30 mins)
- 5 pods Garlic
- 1 Onion chopped
- 1 tsp lemon zest
- 1 tsp lemon juice
- 1/2 cup corn
- 1 tbsp parsley chopped
- 250 g Pasta of your choice
- 4 tsp Olive oil
- salt to taste
- pepper to taste
Cook pasta as per instruction and keep it aside. Reserve 1 cup of Pasta cooked water
Heat olive oil. Add onion & garlic fry till slight brown color. add Lemon zest. Fry for another 2 mins. Switch it off add Lemon juice
Let it cool down. Grind to smooth paste with soaked cashew into creamy paste
Heat 2 teaspoon of oil in a pan. Add capsicums and corn. Fry for 2 mins with bit of salt
Add sauce mix well. Add cooked pasta. Mix well. Cook for another 2 mins
Add parsley & switch it off. Pasta ready to be served!
Notes
- Thin hair pasta works better in this
- You can replace Cashew with Heavy cream (use full fat one)
- You can add grated cheese at the end
- You can add other vegetables like capsicum
