Creamy Lemon Corn Pasta

 

Creamy Lemon Corn Pasta is very rich and tasty recipe. It is pretty simple recipe with common ingredients. If you like the tanginess from Lemon then you will love this one. I love the fact that this recipe doesn’t require any fancy ingredients and not even cheese yes you heard it right. You don’t need cheese for this pasta. Pasta without cheese? Sounds weird? Then how you get the creaminess? It is cashew which gives the creaminess! 

 

As title says it is Vegan version so no cream used. I was also little worried about sauce being curdled in traditional Lemon pasta where heavy cream used. In this version no such worry. 

 

If you want to use Cream in the place of Cashew you should do with heavy cream otherwise it will curdle. 

 

You can serve this pasta as after school snack or main. You can serve with bread butter toast.

Ingredients for making Creamy Lemon Corn Pasta:

 

  • Cashew – 1/2 cup (Soak in hot water)
  • Onion – 1
  • Garlic – 5 pods (peeled and chopped)
  • Lemon zest – 1 teaspoon
  • Lemon juice – 1 teaspoon
  • Corn – 1/2 cup
  • Parsley- 1 tablespoon (finely chopped)
  • Pasta of your choice – 250g
  • Olive oil – 2 teaspoon + 2 teaspoon
  • Salt to taste
  • Pepper powder to taste

Step-by-step instructions to make Creamy Lemon Corn Pasta:

 

Cook pasta as per instruction and keep it aside. Reserve 1 cup of Pasta cooked water

 

Heat olive oil. Add onion & garlic fry till slight brown color. 

 

Add Lemon zest. Fry for another 2 mins. Switch it off add Lemon juice. Let it cool down. Grind to smooth paste with soaked cashew into creamy paste

 

 

 

Heat 2 teaspoon of oil in a pan. Add capsicums and corn. Fry for 2 mins with bit of saltAdd sauce mix well. Add cooked pasta. Mix well. Cook for another 2 mins

Add parsley & switch it off

 

 

Pasta ready to be served! I have added Red chilli flakes for spicing it up!

 

Notes

 

  1. Thin hair pasta works better in this
  2. You can replace Cashew with Heavy cream (use full fat one)
  3. You can add grated cheese at the end
  4. You can add other vegetables like capsicum
