Irani Tea
Irani tea is made with Dum style show brew of decotion and creamy milk. Relaxing indulgence. Served with Osmania

- 3 cups Water
- 2 tsp tea leaves ( I had masala tea mix so I have used it)
- sugar to taste I have used brown sugar
- 4 Cardamom
- 1 cup milk
- 2 tbsp Condensed milk
For sealing
- 1/2 cup All-purpose flour or wheat flour
Add water to the flour and make stiff dough. Heat water with tea leaves, cardamom. Close it with lid seal it with dough. Reduce the flame and boil for 20 mins. Once done remove it and strain to get the decoction
while decoction is getting ready in parallel Boil milk. Add Condensed milk continue to boil till it reduces to 3/4th
Once the milk is ready to mix it with Tea decoction
Enjoy Irani tea! with Osmania cookies / your favourite cookies
Notes
- Full fat milk gives good creamy taste to tea
- You can replace condensed milk with Khoya (sugarless. If using Koya pls. add required sugar)
- Making decotion in dum method in slow flame is critical to the taste of the tea
