Ridge gourd sambar for idli, dosa - No Dal Sambar recipe

Ridge Gourd Sambar - This is simple sambar without any dal, tamarind which goes well with idli, dosa. This recipe is from my cousin and very quick recipe. I always want to try different chutneys and sambar for idli/ dosa.

Ingredients

  • 1 Ridge gourd medium size (remove skin and cut it into small pieces)
  • 1 cup Coconut
  • 2-3 tsp sambar powder
  • 1/2 cup small onion to grind
  • 10 small onion for tempering
  • 1 tsp Cumin Seeds
  • 10 Curry leaves
  • 3 tsp oil
  • Salt to Taste
  • 1/2 tsp turmeric powder
  • 1 tbsp Coriander leaves

Instructions

  • In a blender grind coconut, small onion 1/2 cup and sambar powder into smooth paste with required water
  • Heat oil and add cumin seeds and curry leaves. Let it crackle. Add chopped small onion (I had some chopped garlic too so I hv added that) and fry for 2 mins. Add ridge gourd, salt and turmeric powder, water and close the lid to cook it
  • Add grineded paste and mix well. Cook again. Once start boiling switch it off. Add coriander leaves
  • Serve hot

Notes

  1. Fry the onions before grinding masala. this will give different taste to sambar
  2. You can add mixed vegetables instead of ridge gourd
  3. you can add tomatoes
  4. Since Coconut is added this will not last longer you should finish it soon
