Sun Dried Tomato Pesto Vegetable Puff

Pesto Puff - Since Sun-dried tomato pesto pasta was super hit  (you can find the recipe here.) I wanted to try few more recipes with sun-dried tomato recipe. I had puff pastry at home so decided to make my son's favorite vegetable puff. I have used whatever vegetables you can replace your favorite vegetables instead.

Ingredients

For Pesto

  • 1/4 cup Almonds
  • 7-9 Sun dried Tomato
  • 5 Pods Garlic Peeled and chopped
  • 1 tbsp Red Chili Flakes
  • 20 Basil leaves
  • salt to taste
  • 2 tbsp Olive oil

For Puff

  • 1 cup mixed vegtables
  • 1 tbsp olive oil
  • 2 Puff Sheets
  • 2-4 tbsp Pesto paste

Instructions

  • Make pesto by grinding all the ingredients under sun dried tomato pesto section
  • : Heat oil. Add Carrot, potato, and salt. cook for 2 mins. Add the rest of the vegetables and the required salt. Cook it for 2 more mins
  • Add Pesto and 2 tablespoons of water. Cook for another 5 mins. Once done switch it off. Let it cool down
  • Thaw pastry sheet. Cut into the desired size keep the stuffing and fold it
  • Preheat oven at 180 degrees. Bake puff at 180 degrees for 20-22 mins. Turn it in the middle so all sides can be browned
  • Once done serve!
