Tofu Veg Spring Roll
Tofu spring roll is a very simple and tasty snack with the store brought spring roll / Samosa sheet. I wanted something for this weekend evening snack. I had a few sheets left in the fridge. This is a tofu base recipe but you can add paneer instead of Tofu. Make sure you use firm tofu. This is a definite crowd-pleaser.

- 2 tbsp oil
- 1.5 cups Mixed vegetables Capsicum, carrot, Tofu
- 1 Onion sliced thinly
- 1/2 tsp pepper powder
- 1 tbsp tomato sauce
- 1 tbsp chili sauce
- 1/2 tsp sugar
- salt to taste
- 7-9 samosa sheets
- Oil for Deep frying
Heat 2 teaspoons of oil. Add Onion and bit of salt. Fry till transparent. Remove it Heat rest of oil. Add rest of vegetables, tofu, salt and mix well. continue to cook for 3-5 mins in medium flame.
Add tomato sauce, chili sauce, pepper powder, sugar, and spring onion. mix well. Once done add fried onion and mix well. Now stuffing ready.
Take the frozen samosa sheet. Bring it to room temp. Keep the stuffing and roll it like in video and make spring roll. Keep it aside.
Heat oil. Place the spring roll carefully and fry at medium flame till all sides are brown. Strain the extra oil and place it in kitchen tissue till you serve it.
