Sticky Mango Rice

Mango, rice and coconut milk combined to in this tasty thai dessert

Ingredients

  • 1/2 cup Sticky rice
  • 2 tbsp Sugar / Gula Melaka
  • 1 Pandan leaves
  • 1 cup coconut milk
  • 2 tbsp Moong dal
  • 1 mango (big size) peeled and diced
  • Salt to taste

Instructions

  • Dry roast Moong dal till slight brown in color
  • wash rice 4-5 times. Soak for 4-6 hrs. Drain the water. Arrange it in a steamer, heat water to steam
  • Steam the rice for 20-30 mins with pandan leaves till the rice is translucent. Remove pandan leaves
  • In a separate pan take coconut milk, Gula Melaka heat till it starts to boil switch it off.
  • Reserve 1/4 cup coconut milk Mix in coconut milk to cooked rice little by little till you got porridge consistency.
  • Once it cools down to serve it with cut mango, Roasted moong dal, and coconut milk
  • Enjoy
