Sticky mango rice is the first Thai dessert I have tasted. I loved it from the beginning. The main ingredient in this is Mango! with that rice & coconut milk combo! This is made in heaven! I wanted to post this in my blog for quite some time! Every time before I make a  pic it get over as I make just 2 serving. So this season I wanted to make a video too. Finally, here we go with the recipe

Ingredients for making Sticky mango rice:

Sticky rice – 1/2 cup
Sugar / Gula Melaka – 2 tablespoons
Pandan leaves  – 1
coconut milk – 1/2 cup
Moong dal – 2 tablespoons
mango – 1 (medium size. peeled and diced)
Salt to taste

Step by step instruction to make sticky mango rice:

Step 1: Dry roast Moong dal till slight brown in color

Step 2: wash rice 4-5 times. Soak for 4-6 hrs. Drain the water. Arrange it in a steamer, heat water to steam

Step 3: Steam the rice for 20-30 mins with pandan leaves till the rice is translucent. Remove pandan leaves

Step 4: In a separate pan take coconut milk, Gula Melaka heat till it starts to boil switch it off.

Step 5: Reserve 1/4 cup coconut milk Mix in coconut milk to cooked rice little by little till you got porridge consistency.

Step 6: Once it cools down to serve it with cut mango, Roasted moong dal, and coconut milk

Step 7: Enjoy

Notes

  1. If you cannot find the Thai rice use any rice variety which is more starchy
  2. All Indian Mango will work for this but Alphonso, Banganapalli will work best
  3. You can use store brought coconut milk instead of homemade
  4. Adding yellow moong dal is totally optional
