Being a vegetarian, one big protein source for me is Tofu. One afternoon I was in a mood for some quick dessert but no mood to cook or wait. I also wanted some healthy options. Then I remembered Peanut Butter Banana Tofu pudding . But I ran out of banana but had some mangoes so decided to give it a try. Loved it! After that I almost made this every other day

It is made by blending silken tofu, fresh mangoes, and sweetener (such as honey or sugar) until smooth, then chilling the mixture until it sets to a pudding-like consistency. Ingredients
  • Silken Tofu – 200g
  • Mango – 1 cup cubed
  • Vanilla extract – 1 teaspoon
  • Sugar / honey / maple syrup – 1 teaspoon (adjust to your sweet level also according to your mango sweetness) (I didn’t add as the sweetness from Mango was good enough for me)

Method

Place all the ingredients in a Mixie blender or food processor. Blend until smooth.
