Brinjal and Mochai Sambar – Eggplant, Field beans Sambar – Sambar recipe

For this sambar I don’t put sambar podi. When we get bored with regular type we do this for a change.
I prefer with this combination I have tried with Ladies finger in the past but don’t like it


Ingredients:


Brinjal – 2 (violet ones)
Mochi – 1/2 cup (if u cannot find fresh use the dry one. Soak dry bean overnight)
Tamarind – small gooseberry size

Cumin seeds – 1 teaspoon
Fengreek – 1/2 teaspoon
mustard seeds – 1 teaspoon
Urad dhal – 2 teaspoon
garlic – 5-7 pods
small onions – 10
Green chillies – 5-6
Dry Chillies – 2
Thuar Dhal – 1/4 cup
Turmeric Powder – 1/2 teaspoon
Oil – 3 teaspoon
curry leaves – 1 string

Method:

  • Wash and cut Brinjal into thin wedges
  • Heat 3/4 cup of water when it is hot switch off and add tamarind to it and leave it aside for 15 mins
  • After 15 mins with your hand mash the tamarind well. Strain the tamarind water and keep it aside
  • Wash soaked Mochai and cook it in pressure cooker (2 whistle) and keep it aside
  • Wash thuvar dhal and add 1 cup of water and cook it  (3/4 cooked).   If you are using pressure cooker cook till 2 whistle
  • In a Kadai add 1 teaspon oil when it is hot add onion and garlic and fry for sometime
  •  When sound completely off from pressure cooker open the lid. Add  turmeric powder, fried Onion, Garlic,
    Green chillies  and pressure cook till soft. (completely cooked. One more Whistle)
  • In a kadai put the oil and when it is hot, add mustard. When it pops up, add fenugreek seeds, cumin seeds,dry chillies, curry leaves and asafetida and fry for just a second 
  • Add Brinjal and fry for few mins
  • Add tamarind and water cook brinjal for 5 mins
  • When it start boiling Dhal and cooked Mochai with salt
  • let it boil for 10 mins
  • Switch off and now it is ready to be served
