Chinese Fried Rice

I had some Tofu and spring onion left in the fridge.Also had some left over rice from  previous day. Since I had something set up for lunch the left over rice was good enough for the kids decided to do Chinese fried rice. Normally I add broccoli to this recipe however this time I didn’t have it and too lazy to go and buy so went without that


Ingredients:

1 Cup Cooked brown  Rice ( left over rice gives good result )

2 green onions (Spring Onion), chopped
2 Cups of vegetables (Carrot, Beans, Cauliflower) all chopped finely


2 Garlic
1/2 Inch Ginger
1 onion, small dice
1.5 TB soy sauce
1/2 tsp. white pepper

1/2 cup Firm Tofu
Green Chillies – 2
2 TB oil

Ajino moto – 1/2 teaspoon ( I don’t use it)

Method:

Heat the kada

Add Cut firm tofu and fry for 5 mins. keep it aside
Heat Kada to medium high and add oil. 
Add onion, garlic and ginger and fry till onion is lightly browned
Add Vegetables, Chillies and salt fry till Veg is 1/2 cooked and crisp ( I used to close it with lid for 5 mins). 
Add rice and fry for a few minutes, making sure the rice does not stick. Add fried Tofu
Add  soy sauce, pepper, and green onion to the rice and stir. 
Cook one more minute, remove from heat, and serve. 


Note: I always have more vegetable to the rice. If you prefer more rice reduce the qty of vegetable to 1 to 1.5 cups
