Pumpkin Milk Kootu – Prangikai Paal kootu recipe – Red Pumpkin Recipe

I love Pumpkin. It has good nutrition and high fiber content. I came across this recipe in one of the cookery show on TV.. This is very similar to what my MIL used to do but more heathier version. No oil at all.. Usually my mum used to say when there is no oil no taste but this one has taste and more healthier why don’t you try and let the dish speak for itself
In Singapore you get different countries Pumpkin I normally buy Australia and use the pumpkin with skin



Ingredients:


Cut Pumpkin – 1/4 kg
Onion – 1  (sliced thinly)
Fennel Seeds – 1/2 teaspoon
Green Chillies – 2 (Slit into 2)
Low fat milk – 1/2 Cup
Turmeric powder – 1/4 teaspoon
Curry Leaves – 1 string
Salt Required
Chopped coriander leaves – 2 tablespoon


Method


Cut the Pumpkin into one inch square pieces (I have used it with skin) If the pumpkin is hard and u prefer to take out the skin scrap the skin
Heat the kada
Add Pumpkin
Add Onion
Add Fennel Seeds
Add Turmeric powder
Add Green Chillies and Curry Leaves
Add water and close with lid and cook it (5-7 mins)
When it is cooked add Milk and Salt and boil it for 5 mins
Add Coriander leaves and serve
