Rice-coconut noodles (shevayi/idiyappam)

I am huge fan of this traditional version of idiyappam. My sisters love it too. My mum always take pain to do this one instead of instant rice flour one. When I first moved to Singapore i Didn’t bring this special equipment with me. So it always in the list of when I go back to India I must eat list (That list never ends right).  I normally don’t prefer coconut flavour but this one is an exception. I like this so much I have decided to get this special equipment. So had this for the past 8 years now. My kids love the process of making it. It is bit long process but it is all worth it.

Ingredients:
2 cup idli rice
1 /2 cup fresh / frozen coconut
Salt

Method:
Soak the rice in water for around 3-4 hrs.

Grind it to a smooth paste with coconut, water and salt, adding required amount of water. Batter should be in dosa batter consistency.
Make idli out of it (I normally use Idli Cooker)
And stuff the idli into the special equipment and turn it to get idiyappam out of it
Serve with coconut chutney or mix Tomato Thokku / Puliyodhare
