Avial recipe – Aviyal recipe – Perfect side dish for rice or Adai

Avial is my favourite. Especially with Adai. My 2nd son hates it. So I don’t do it that often. I use whatever vegetable available Even though I prefer Indian vegetables in it. It is so easy to do. This is one dish I haven’t found the replacement for coconut and do with coconut.


Ingredients:


Drumstick-1
Yam / Senai Kilangu-1/2 Cup
Raw banana/vazhakka-1

Avaraikai / Cluster Beans (Kothavarangai) -1/2 Cup
Carrot – 1
Green chillies-5-6 (per your spice level)
Cumin seeds / jeerakam -1/2 Teaspoon
Small Onion-5-6
Turmeric powder-1/4 Teaspoon
Salt- to taste
Freshly grated coconut- 1 ½ cups
Coconut oil – 1 1/2 Tablespoon
Curry leaves- 10-15
1/2 Cup of buttermilk


Method:

  • Cut the vegetables into 1 inch pieces.
  • 1/2 Cook Vegetables in Pressure cooker with salt with just enough water.
  • Grind Coconut, green chillies, jeera and small onion to slightly coarse paste.Add this to the vegetables along with turmeric powder and salt.
  • Rinse the pulser/mixer with ½ cup of water.Add this to the vegetables on the stove and stir it. Cook it till all the vegetables are cooked
  • Add buttermilk.Let it simmer for 5 mins.Check salt and sourness.Make sure the Aviyal has reached the right semi solid consistency.
  • Turn off fire.Coconut oil and curry leaves are to be added last.
