I love Indo Chinese food. Esp. Spicy food. schezwan sauce has tremendous flavor when added to the Chinese rice, noodles and soups it gives unique taste. I love all the ingredients in it. My kids and my huband loves it with noodles. This is sauce can be used to do many indo chinese food. If you prepare this in advance and store it in fridge you can make any chinese dish in no time. You need to store this in glass bottle
Ingredients:
Red Chillies – 5
Finely chopped coriander leaves – 3 teaspoon
Onion – 1/4 cup chopped. (if you have spring onion take the white portion at the bottom. I didn’t have so used the normal red onion)
Tomato paste – 2 tablespoon
Garlic – 1 tablespoon
Soya Sauce – 1 teaspoon
Vinegar – 1 teaspoon
Salt per taste
Sugar – 2 teaspoon ( i have used brown sugar. If you don’t have use white sugar)
Sesame oil – 1/2 cup (Gingerly oil)
Method:
Chop tomatoes in bigger chunks and grind to paste.
Grind it again. Heat the oil till smoke point in the Pan. Add onion, garlic and coriander leaves and salt. Fry till it’s brown in color.
Add Grindedpaste, tomato paste and fry for another 2 mins. Add vinegar, soya sauce, sugar and mix it well. Fry till oil separate out from the gravy. Stir in at regular intervals
Switch it off and let it cool down completely and store it in airtight container

I don't see the amount of tomatoes used in the recipe.
depends on the size I hv used 1 and 1/2 to get 2 tablespoon needed

One question. I'm using normal red chillies for this.. I don't have dried red chillies here. I see in your ingredient you've said to use 5 but the picture has a lot more. How many regular red chillies should I use?
I have used about 8 because I wanted it spicy. 5 is for normal spiciness.. If you have regular red chillies Self life can be shorter. Depending on the spiciness of the chillies you can use the equal amount or less. you can substitute with red chillie flakes 1/4 teaspoon for every 1 dry chillies.. Hope this helps.
