Normally I get sambar powder from my mum. All these years I used to get it from her whenever I visit India. Last year I tried to do myself and it didn’t come good and the color was towards a darker color. This time when I visited her I noted down the steps and measurements. She grinds the chilies separately and mixes it together after other ingredients are powdered to retain the color. So here you go 
Ingredients:


Red Chillies – 1 KG
Bengal Gram Dhal – 200g
Thuar Dhal – 100g
cumin seeds – 50 g
Pepper Seeds – 50 g
Fenugreek – 50g
Raw rice – 50g
asafoetida – 25 g
Turmeric – 50 g
Coriander seeds – 250g / 1/4 Kg
Mustard seeds – 50 g
Urad dhal – 50 g
Oil – 1 teaspoon

Method



Dry Roast each ingredient separately. Keep the Chillies separately.
Heat the oil and add asafoetida and fry add it to the Ingredients. Let it cool down together

Grind the Chillies separately
Grind other ingredients together
Mix in Chilli powder and other powder together

Note:

This can be done using mixie or by giving it in the mill. I prefer powdered in mill
