Paal Payasam / Milk Kheer – Simple kheer recipes – Festival Recipes

My 2nd son loves Payasam. These days I also like to do Kheer. Because I can flavour it and have it as part of my milk serving. It is easier to make it healthy too. In most of Kheer I use either Slim or low fat milk. After reading or hearing about Pal Payasam (Milk Kheer) I wanted to try it for very long time. My son loves Aval (beaten rice) Payasam or Semiya (Vermicelli) payasam I always ended up doing it. If I do it for myself I do it  with some grains or seeds like Quinoa. Rice Kheer is very rare. This time I did this for mother’s day and happy to share the recipe with you guys

Ingredients:
Bastmati Rice – 1/4 Cup
Milk – 4 cups ( I have used 2 cup slim and 2 cups low fat)
Ghee – 2 teaspoon
Sugar – 1/2 cup (increase if you want it to be sweeter. I have used brown sugar. White sugar can be used in place of brown sugar)
Mixed nuts – 3 tablespoon ( I have used Cashew and Pista)
Cardamom powder – 1/4 teaspoon

Method:


Wash rice and drain the water. It it dry for 30. Add 1/2 teaspoon of ghee and fry the rice. When it is cool down run the mixer 2 sec to make it to rice rawa. Keep it aside

Heat another teaspoon of ghee and fry nuts till it is light brown in color and keep it aside.

Heat the milk in a pressure pan or heavy bottom vessel. Grease it with rest of ghee. Add milk and let the milk boil.  Put a clean spoon into it to avoid milk leaking while cooking or getting burnt. Add the rice rawa and pressure cook it till 3 whistle. When it cool down open the lid and add Sugar and mix well. Simmer the kheer till desired consistency. 

Add the fried nuts and serve hot / chilled. I like it both the way

    Something new because I have never seen rice for pal payasam. But its really interesting to find out new styles of desserts and this is like one I will love so much. Though I am not big on desserts, I like to close my meals with a small amount of such a delish sweetened fragrant dessert.
