Spicy Diamond Cut

Till we are in the college my mum use to do only sweet diamond cut. However when we were in college we are not big sweet eaters (me and my sisters) So mum was running out of options to do quick snacks. In the end she tried this spicy version. It was instant hit. She does it with maida (all purpose flour). When I do I either do it with full whole wheat or half maida / half wheat. It is quite addictive. There are many different names for it Maida Biscuits or Khara Biscuits 

Ingredients
Wheat Flour – 2 Cup
Maida / All purpose flour – 2 Cup
Red Chilli Powder – 1.5 teaspoon
Asafoetida – A pinch
Cold butter – 1 tablespoon
Salt per taste
Garlic – 2 teaspoon (Finely Chopped) (optional)

Oil – 4 Cups for deep frying

Method:


Take a broader vessel. Add all the ingredients except Oil. Using your finger tips bring all the ingredients together. It will resemble bread crumbs. Using water make to smooth dough (same consistency like Chapathi  dough). Dough shouldn’t be sticky. Cover it with lid and leave it aside for 30 mins.

Take lemon size ball and roll out like chappathi / roti. Using sharp knife cut into Diamond shape. Repeat till all the dough is made into diamond pieces.

Take deep curved vessel and heat the oil. When oil is hot take diamond pieces and drop it slowly into hot oil. Make sure you have enough space for each diamond to float. Fry till the pieces are brown in color. Fry it in medium flame. Turn the pieces few times. Turning will make sure the diamond pieces get cooked evenly.

Once cooked drain the oil and set aside on a plate lined with kitchen tissue paper (kitchen towel)

Once cool down store it in airtight container. Enjoy the snack
