Beetroot Halwa (Beetroot milk sweet)

My husband and my 2nd son is big fan of Carrot Halwa.  Also my whole family loves dishes with Beetroot. Last weekend one of my friend called me and told me they are coming to visit for tea time. I had no titbits left to serve them (surprising!) I wanted to do quick sweet and remember beetroot halwa I had at my friend’s place I had one beetroot left in my fridge. I have tried long time ago and it was a hit. So decided to go for it
Ingredients:


Beetroot – 3 cups (grated)
Sugar – 1/4 to 1/2 cup ( I have used only 1/4 and used brown sugar. Adjust to your sweetness)
Pistachio / Pista powder – 1 teaspoon
Cashew nuts – 1 tablespoon
Ghee – 2 tablespoon
Cardamom powder – 1/4 teaspoon
Milk – 3.5 cups ( I prefer more milky taste if you don’t like it reduce it to 2)
Salt a pinch



Method:



Heat 1.5 tablespoon of ghee in a pressure cooker. Fry cashew till brown and keep it aside (just remove the nuts only leave ghee in the pressure cooker)

Add grated beet and fry till raw smell goes off. It took 7 mins for me. (this step is very important. If you skip you get the unique beet smell). Add milk and close the lid of pressure cooker and cook till 4 whistles. Let it cool off

Open the lid you will see all the milk and in medium flame continue to simmer till milk is absorbed. Add sugar and remaining ghee and cadamom powder and continue to stir till the halwa is thick and leaves the side. Add Pista / pistachio Powder and fried cashew and mix well

Switch off. This can be eaten hot or cold. Enjoy!

    love beets halwa, your pressure cooker version sounds interesting, halwa looks too delicious.
    btw…you have not mentioned abt the brown sugar qty, is it 1-2 tbsp or cup?
