Karasev – Diwali / Deepavali recipes

I wanted to make Karasev at home for quite sometime. My mum has special karandi / spoon for making karasev. Last few times when she was here she was saying you need that spoon to do karasev, normal murukku presser will not work for it as karasev is done using besan flour. So I kind of give up on the idea however when I was planning for this deepavali / diwali I saw posting in many blogs using normal murukku presser. So I have decided to try. It came out perfectly good. I am happy and my kids are double happy 🙂

Ingredients

Rice flour (Arisi mavvu) – 1 cup
Besan flour / Kadalai mavvu – 2 cup
Salt to taste
Pepper powder- 1/2 teaspoon (I made by grinding pepper corns in mixie)
Red chilli powder – 1 teaspoon (adjust to your spice level)
Butter – 1 tablespoon
Water for making dough
Oil for deep frying


Method:
 In an broader vessel add butter, rice flour, besan flour, butter, chilli powder, pepper powder and salt and make a dough. Add water little by little. The dough shouldn’t be too tight. If it is too tight it will be difficult to press

Take deep curved pan and add enough oil for deep frying. Fill the presser with dough and when the oil is hot press the dough directly into hot oil. ( I have used Murukku achu / plate). Let it cook over medium flame. When “Shhhhhh” oil sound ease out. Drain the excess oil and place it on a kitchen towel. Repeat the process for rest of the dough.

When it is cool down break into pieces and store it air tight container..
