Sweet potato Quinoa Patties / Sweet potato Quinoa cutlet – Healthy snack

I always look for healthy options in making snack for kids. Lately they like patties / tikkis. I also try to sneak in vegetables in it. Most of the time I replace potato with sweet potato. This patties can be used as patties in burger or served as cutlet. 
Ingredients:


Cooked Quinoa – 1 Cup
Sweet Potato – 2 cups ( mashed)
Green chillies – 2 (Finely chopped)
Onion – 1 (finely chopped)
Coriander Leaves – 1 tablespoon (finely chopped)
Garlic – 3 (finely chopped)
Salt to taste
Cumin powder – 1/2 teaspoon
Garam masala – 1/2 teaspoon
Mint leaves – 1 teaspoon (finely chopped)
Bread crumbs – 2 tablespoon
Grated Cheddar cheese – 2 tablespoon (Optional. I find it gives good flavour)
Oil – 1 teaspoon & oil for shallow fry



Method:

Add Red chilli powder, salt to smashed sweet potato. Mix well. Add cooked Quinoa and mix well. Keep it aside. Heat pan add oil. When it is hot add cumin seeds. Let it crackle. Add onion, Garlic and fry till soft. Add smashed sweet potato fry for a min.  Fry for another 3-6 mins. switch off. Add bread crumbs and grated cheese. Mix well and fry till cheese is melted and all comes together. Add coriander leaves and mint leaves. Mix well. Let it cool down

Make Lemon size balls and flatten it with the plam. Heat flat pan and when ti is hot put the flatten tikkis / patties. Drizzle oil around it. Cook till it is brown turn it over and cook other side. 

Serve hot.
