Puli Kuzhambhu – Puli Kulambu – Puli Kuzhambu – Brinjal and drumstick puli kuzhambhu Recipe

Our family love puli Kuzhambhu / puli kulambu.. Have you tried the combo of Eggplant and drumstick? it is one of the best combo.. Whenever I make this Kulambu / Kuzhambu I can feel the aroma in the whole house.. It goes well with both white rice and brown rice. I also love it with idli. As I mentioned in other posts puli kulambu tastes better next day
Ingredients


Brinjal / eggplant – 4 small (Cut into 2 inch pieces)
Drumstick – 1  (Cut into 2 inch pieces)
Red chilli powder – 2 teaspoon
Cumin powder – 1 teaspoon
Coriander powder – 1 teaspoon
Grated coconut – 1/4 cup
Small onion – 4
Garlic – 4+1 (slice into thin strips)
Tomato – 1
Curry leaves – 10-20
Turmeric powder – 1/4 teaspoon
Thick Tamarind water – 1 cup + 1 cup water
Salt to taste
Gingerly Oil – 2.5 tablespoon 
Fenugreek seeds – 10 pieces
mustard seeds – 1/4 teaspoon
Urad dhal – 1 teaspoon
Asafoetida a pinch


Method:
Grind coconut, 1/2 tomato, small onion, 1 garlic, Cumin powder, turmeric powder, coriander powder, Red chilli powder with enough water.

Heat the pan and add 2 tablespoon of oil. Add mustard seeds, Fenugreek seeds, asafoetida and urad dhal. Fry till urad is brown in color. Add curry leaves, another  1/2 tomatoes,  Brinjal and drum stick fry for 2 mins. Add grinded paste and tamarind water Mix well. Add required Salt and let it boil till raw smells goes off. Add rest of the oil and boil for another 2 mins

Switch it off and enjoy it.
