Thinai is high in nutrition. It is also know as Foxtail Millet in english, Kangni in Hindi, Korra in Telugu, Navane in Kannada and Thina in Malayalam. Up until recently I am not exposed to different grains. But for the past couple of years I have been trying quite a few millet varieties. And our family is falling in love with those. This dosa is really crispy and tasty. It is also healthy
Ingredients:
Thinai / foxtail millet – 1 cup
Raw rice – 1 cup
Bar boiled rice – 1 cup
Fenugreek seeds – 1/4 teaspoon
Urad dhal – 1/2 cup
Salt to taste
Oil for cooking dosa
Method
Wash and soak thinai separately for about 6 hours or overnight. Wash and soak Urad dhal and fenugreek seeds separately for 6 hours or overnight. Wash and soak both the rice together for 6 hours or overnight
Grind Thinai, fenugreek seeds and urad dhal. When it is 3/4 th done add rice and grind it together with required water into smooth batter. When it is done add salt and grind for 3 more mins. Let the dough ferment for 6-8 hours
Heat flat pan. When it is hot pour laddle ful of batter and spread outwards (just like how you do it for dosa) drizzle oil around it. When it is cooked fold it and take out
