These days I love to try new recipes with millets. In the past whenever I visit India I do pack some millet varieties. So it will last couple of months for me. But these days we do get most of the millets if not all in Singapore. So I try to include it at least twice a week into our dinner. Even though Idli is made for breakfast back home in my household I make it more for dinner. As kids used to western breakfast. Now over to the recipe
Ingredients:
Samai / Little Millet – 2 cups
Idli rava – 2 cups
Urad dhal – 3/4 cup
Fenugreek seeds – 1/2 teaspoon
Salt to taste
Method:
Wash and soak Little Millet, Idli rava, Fenugreek seeds together and urad dhal separately for 6 hours or overnight.
Grind little millet, idli rava together. Grind Urad dal till fluffy with required water. Add back the urad dhal and grind together with salt for 1 min.
Ferment the batter for 7-8 hours or overnight
Mix well the raised / fermented batter. Grease the idli plate / or place the wet cloth in traditional idli plate. Pour the idli batter and steam it in idli cooker for 10 mins or till when inserted a spoon it comes out clean. Remove it from idli plate
Serve hot with your favourite chutney

is rava compulsory? bcs while saamai is so healthy, rava made of maidha is opposite. so any way to avoid rava?
Rava used here is broken idli rice not Semolina or rava.. If you don't have Rice Rava you can use idli rice 1.5 cup
