My kids love Murukku (Ok Ok I hear you saying who doesn’t).. I love trying small variations. Other day when I was clearing the wardrobe I saw Thinai flour (Millet flour) now days if I see any new grain based items I just buy it first and decide what to do.. This murukku came out pretty good and crispy. You will not notice any big diff in the taste…
Ingredients
Thinai flour – 1 cup
Rice Flour – 1 cup ( I have used idiyappam flour)
Roasted Urad dal flour – 2 tablespoon
Salt to taste
Cumin seeds – 1 teaspoon
Chilli powder – 3/4 teaspoon
Butter – 2.5 tablespoon
Water to make the dough
Asafoetida / Hing – a pinch
oil for deep frying
Method:
Dry roast the Thinai flour till nice aroma released. Let it cool down. Take broad vessel and add all the ingredients except oil. Mix well. Add water little by little and make a soft dough. Take Murukku presser and put in your preferred plate. I have used star shaped one. Fill it with dough. Press the murkku on a tissue paper.
Heat the oil in deep pan. When it is hot add slowly few pressed murukku. Fry them in medium flame till “shhhh” sound subside. Turning them few times. Drain the oil and remove it from pan and place it on a kitchen tissue paper. Repeat the process till all the dough is done
Once cool down store it in air tight container and enjoy.
