I love masala Vadai even though it is deep fried. It is full of dhals so it is protein packed. I have posted plain masala vadai before. I love this version because of the crunchy vegetables. Also carrot gives slight sweetness this vada. This vada is so addictive. This recipe is from one of my friend who has completed a Nutrition and diet course. Ingredients
Split Chana dhal – Bengal gram dhal – Pacha kadalai paruppu – 1 cup
Yellow moong dal – 1/4 teaspoon
Dry read chillies – 3-5 (as required. Adjust to your spice level)
Green Chillies – 1 (finely chopped)
Carrot – 1/2 cup (grated)
Salt to taste
Fennel seeds – 1 teaspoon
Curry Leaves – 2 tablespoon finely chopped
Coriander leaves – 2 tablespoon finely chopped
Ghee – 1/4 teaspoon
Rice flour – 2 tablespoon (Optional)
Oil for deep frying
Method:
Wash and soak Channa dal, Moong dal, Fennel seeds, red chillies together for 1 hour to 3 hours. Drain it and leave it out for 30 mins. Grind fennel seeds and chillies into smooth paste. Grind dhals, salt, curry leaves, into coarse paste. Use very little water to grind. Add chopped coriander, Ghee, Rice flour (if using) and carrot. Mix well.
Divide the dough into equal size ball. Heat deep curved pan and add oil. when oil is hot press the dough between your plams and drop it slowly into hot oil.
Let it cook till “Shhhhhhhhhh” sound subside. Turn the vada at regular intervals. Once cooked drain the oil and place it on kitchen tissue paper for extra oil to be drained
Serve hot with your favourite side dish

I rarely get a chance to prepare Vadai at home Veena, which is sad since I love them. But you know, fried food and calories go hand in hand! But this idea of mixing carrot with the vadas is great since you get vitamins as well with the proteins. So its still on a healthier side than most of the snacks.
