When my friend’s mum came over she brought murukku and I could taste cashew in it. I loved the flavour of it.The other day when I was flipping thro’ the recipe book I saw mundhiri murukku. I modified it to my taste. My kids loved it to the core..They said they can taste the cashew. I thought without chilli / spice we would be able to have more … But to my surprise this tasted wonderful and kids were having quite a few at one go …
Ingredients:
Rice flour / Idiyappam flour – 2 cups
Butter (at room temperature) – 2 tablespoon
Salt to taste
Asafoetida / hing/ Perungayam – 2 pinch
Roasted white Sesame seeds – 2 teaspoon
Roasted Urad dhal powder – 1/4 cup
Cashew nuts – 70g
Oil for deep frying
Method:
Soak cashew nuts in hot water for 10 mins. Grind to smooth paste.
Take rest of the ingredients except oil in a broader vessel. Add cashew paste (Drain it if needed as paste has to be really smooth).
Add water little by little and make a smooth dough. Now take a murukku presser. I have used single hole plate but you can use your favourite plate. Fill in presser with dough
On a clean kitchen tissue make a small round shape murukku (as shown in the pic). you can do as many rounds you want. I have made small version.
And Heat the oil in a curved pan. When the oil is hot add pressed murukku one by one. You hv to slide each murkku slowly one by one by side of the pan. Make sure you leave enough place for murukku to move around. Cook Murukkus at medium flame till “Shhhh” sound subside. Turn the murukku few times while cooking
Drain the extra oil and take the murukku out of the oil and leave it on kitchen tissue to drain extra oil
After cool down you can store it in Air tight container and enjoy as you need
