Vella Puttu – Rice sweet snack – Rice flour with Jaggery – Traditional South Indian Snack – Pooja recipes – Nivedhanam recipes – nivedyam recipes – Navaratri Recipes

I love this rice Puttu. This is one of my childhood favourite for an after school snack. During my college days I am not big fan of Indian sweets. I used to have very few jaggery based sweets. Puttu is one of it. After marriage I seldom do it as I am the only one who likes it as my hubby and kids are not big fan of it. But whenever my mum visits me I will try to do this. My mum normally gives me puttu flour (rice flour). So I don’t have stepwise pic for that. This is perfect for Navaratri.
Ingredients


Rice flour – 1/2 cup (Take 1 cup of Idli rice / Bar Boiled rice roast till brown color. Grind to powder.)
Jaggery – 1/6 to 1/4 (Adjust to your sweetness)
Grated Coconut – 1 tablespoon
Cardamom powder – 1/4 teaspoon
Sesame seeds – 1 tablesoon
Ghee – 1 teaspoon
Nuts of your choice – 1 tablespoon (I have used baked cashew. If you are using raw roast it till brown color in a teaspoon of ghee)



Method


Pound sesame seeds, cardamon powder to coarse powder. Mix in Grated Coconut and keep it aside

Add salt to the flour. Mix well. Using hot water little by little make a wet mixture. 

When you hold the mixture it should hold together but when you leave it should fall apart (as shown in the pic). 

Steam this mixture for 10-15 mins. Let it cool down and and crumble the mixture. Keep it aside

Add water to jaggery. Boil till it is fully melt down. Strain it to remove the impurities. Return to fire and boil till soft ball (when dropped in water it should form soft ball). 

Add Jaggery syrup steamed rice flour. Add Sesame seeds powder, 1 teaspoon of ghee to steamed rice mixture. Mix it well. Add Nuts and mix it well

Offer it to god and enjoy it
