My sons these days like noodles especially the local flavour. When I visited India some time ago, the younger generation also like fusion food. We can see lots of Chinese food in most of the hotels. Noodles are famous in India also. These days you get a different kind of noodles. I tried this with store brought fresh noodles you can do it with your favourite noodles round medium size noodles will work well. I have used broccoli in the noodles as it is favourite with my boys.. but you can replace it with beans and cabbage.
Ingredients
Chow Mein Noodles or your favorite – 800g
Mixed vegetables – 3 cups (broccoli, carrot, mushroom, bean sprouts, capsicum)
Spring onion (white part) – 1 teaspoon
Spring onion (green part) – 1 tablespoon
Seaweed sesame seeds seasoning – 2 tablespoons (if don’t have use roasted sesame seeds)
salt to taste
Pepper to taste
Soya sauce – 1 teaspoon
Chilli sauce – 2-3 teaspoon
Tomato sauce – 1 teaspoon
Pan-fried Tofu – 1/2 cup
Celery leaves – 1 – 2 teaspoon
Sesame oil – 2 tablespoon
Garlic – 5 pods
Method:
Heat pan with sesame oil, Add sliced garlic and fry till light brown color. Add all the vegetables except green spring onion, mushroom, sprouts, celery leaves. Add salt. Mix well, Fry n high flame for 2-3 mins
Add mushroom, sprouts, celery, Salt close it with lid for 1 min. Add soya sauce, chilli sauce, tomato sauce. mix well. Add Fried Tofu. Mix well
Add noodles. mix well. Fry at high flame for 2-3 mins. Add pepper powder mix well.
Add Seaweed seasoning. Add spring onion switch it off
Serve hot
