7 (Ezhu) kari kootu – Thiruvathirai Ezhukari Kootu – Pongal Recipes

I remember my great grandma does mixed vegetables kootu during pongal time. I love mochai. I love it by itself or adding it to any sambar or kootu. I like anything with mixed vegetables it make it easy to get your vegetables count for the day (easy to meet the recommended servings of  vegetables for the day)

Ingredients:


Moong Dal – 1/4 cup
7 Mixed vegetables – 3  Cups (Avaraikai (broad beans), Fresh Peeled Mochai, Eggplant (Katharikai), Drumstick (Murngaikai), Yellow Pumkin (parangikkai), Karunai Kizhangu (Yam), Senai Kizhangu (elephant yam)

Coconut gratings –  3 tablespoon
Cumin seeds – 1/2 teaspoon
Mustard Seeds – 1/4 teaspoon
Oil – 2 teaspoon
Curry Leaves – 15 leaves
Rice Flour – 1/4 teaspoon (Optional. I didn’t use it)
Salt per taste
Turmeric powder – 1/4 teaspoon
Kootu powder – 1 tablespoon



Method:


Wash and cut vegetables into small cubes. Peel the mochai and take out the seeds

Fry the coconut gratings till nice smell comes and keep it aside
Cook the vegetables with salt  (don’t over cook the vegetables. So cook hard cooking vegetables first and adding fast cooking vegetables later)

Cook the dhal and add that to cooked vegetable.Add Turmeric powder and  kootu powder. Let it boil for 4-6 mins. Add grated coconut and mix well. Cook for another 2 mins

Heat the kada add oil. When it is hot add cumin seeds, mustard seeds and curry leaves.when start to pop add to to the kootu and mix well. Serve hot
