I ran out of vegetables towards the end of the week. I wanted to make some sambar. I left with only few vegetables in the fridge. None of the usual sambar vegetables were there. My helper was suggesting to make jackfruit seeds sambar. I told her I never tried before. She assured me it will be tasty. So I have decided to give it a try. It came out pretty good
Ingredients:
Cooked Thuvar Dhal / Dal /Thoor Dhal – 1/2 Cup
Tamarind paste – 3 tablespoon (thick one)
Turmeric powder – 1/4 powder
Sambar Powder – 1.5 tablespoon
Red chili – 2 broken into 2
Curry leaves – 10-15
Mustard seeds – 1/4 teaspoon
Urad dhal – 1/2 teaspoon
Fenugreek seeds – 1/10 teaspoon
Asafoetida – A Pinch
Salt per taste
Onion – 2 tablespoon or small onion – 4-5
Jackfruit seeds – 1 cup (Slice Each seeds into into 4 pieces)
Cumin powder – 1/2 teaspoon
Method:
Heat the pressure cooker pan or stockpot. Add oil. When oil is hot add mustard seeds. Let it pop. Now add urad dhal, Fenugreek, asafoetida, curry leaves and red chili. Fry for 10 sec. Add Onion. Fry till it soft. Add jackfruit seeds and fry for another min. Add Salt, Turmeric powder, cumin powder and sambar powder. Fry for 3-4 mins.
Add Tamarind paste. Mix well. Let it boil for a min. Add cooked dhal and mix well. Add enough water (to your desired consistency. I have added 1.5 cups) and adjust the salt. Mix well. Close the lid and cook it till seeds are cooked. You can put the weight for the pressure cooker and cook till 2 -3 whistle.
Enjoy this sambar with brow rice or sambar

Raks normally I collect from Jackfruits I buy but with that I cannot do Stir fry hmmm.. Hope we get one day just the seeds in the market 🙂
