Cream of Cabbage Soup

My son has a habit of having soup during his exam week. He believes that this keeps him healthy. However he is selective. He prefers simple and less spicy versions. Cabbage cream soup is one such simple and very less spice is used in it. It is also good for people who are on diet. Haven’t you heard cabbage helps to lose weight? This can be used to replace your meal or can be served as starter.

Ingredients
Cabbage – 3 cups (Chopped into 1 inch dices)
Onion – 3 tablespoon (finely chopped) I have used Red onion if you have white use white
Oil – 1 tablespoon
Milk – 1/2 cup
Water or Vegetable stock – 4 cups
Garlic – 3 pods (finely chopped)
Salt per taste
White pepper per taste (my kids are not big fan of white pepper so I have used black)
White Sauce – 1-2 tablespoon (optional) – I didn’t use

Method:

Heat the kada and add oil. When it is hot add garlic and onion and fry till it is soft. Add Cabbage and fry for 2-3 mins. Add 1.5 – 2 cup of water, salt and cook the cabbage. Once cabbage is cooked switch off the flame. Take one tablespoon of cabbage keep it aside




Grind rest of the cabbage into smooth paste. Heat the kada again. Add grinded cabbage paste and rest of water. At this point add water to your prefer consistency. Adjust the salt. When it boils add milk and pepper. Mix well and let it boil again

Switch off and serve hot with bread croutons
