Miso Vegetable Noodles

I heard enough about Miso from my office colleagues. I wanted to try out for quite sometime. Finally I had courage to buy it this weekend. I made quick Veg noodles with it. It is tasty and whole thing is less than 20 mins. This can be done with your favourite vegetables. These days my 1st son also prefer to have this kind of simple fusion food.

Ingredients


Noodles – 300g
Vegetables of your choice – 2 cups ( I have used Baby Bok Choy, Carrot)
Firm Tofu – 1 Cup (Sliced into 1 inch cubes)
oil – 1 teaspoon
Garlic – 1/2 teaspoon (finely chopped)
Ginger – 1/2 teaspoon (finely Chopped)
Miso Paste – 1 Tablespoon
Onion  – 2 tablespoon Finely chopped
Paparika flakes – 1/2 teaspoon ( or to your spice level)
Water – 600 Ml



Method:


Cook the noodles as stated in the package and drain the water. Keep it aside

Heat 1/2 teaspoon of oil and fry the tofu till all sides are slight brown. Keep it aside
Heat the rest of oil in the kada. When it is hot add garlic, Onion and Ginger. Fry till Onion is soft 
In a separate vessel add Water, Salt, fried onion and Carrot. Boil it till Carrot is cooked. Add rest vegetables and tofu.  Let it boil for another 3 mins. Add Miso paste and boil for another 30 sec. Add the cooked noodles, paparika flakes and serve it hot

    Interesting and inviting. My kind of food and love it, the simplicity and outcome. After all I am a fan of noodles too.
