Carrot Orange Ginger Soup

 I do soup almost every other day. Just returned after my biz trip and was longing for something hot and perfect for evening. I was thinking of making soup. When I checked the Fridge I had some carrot left. So decided to do Carrot soup. I have tried plain carrot soup in the past. It tasted bit sweet. I Wanted to give some twist to the soup. Was contemplating to add lemon or orange finally decided to try out with Orange.
Ingredients:


Carrot – 3 (peel the skin and cut into bigger junks)
Ginger – 2 inch (Cut roughly)
Onion – 1 (slice into 1 inch cubes)
Garlic – 10 Pods (peel the skin and cut roughly)
Cumin powder – 1 teaspoon
Pepper powder – 1 to 2 teaspoon (as required)
Orange juice – 2 Cup( I made from fresh orange)
Salt per taste
Oil – 1 teaspoon
Butter –  1 teaspoon
Coriander leaves – 1 tablespoon (finely chopped)



Method:

Heat the pressure pan and add butter and oil. When it is hot add garlic, onion and ginger. Fry till onion is cooked or soft. Add carrot, salt and fry for another 2 mins. Add salt and water enough to cook. I have pressure cook it till 3 whistle. Switch off the flame and let it cool down

When cooled down transfer to blender / mixie / food processor and make smooth paste of it. Heat the kada and add grinded paste, Cumin powder, pepper powder, salt (if required) and water to required consistency. Let it boil. When it start to boil add Orange juice. And let it boil for another min

Serve hot with toasted bread or biscuit.
