Baby Corn Manchurian

My kids love fusion food. They are big fan of local food too.. Manchurian is one of the food they love it. Normally I do this with Cauliflower. It has been a while since I did Manchurian. This weekend I brought baby corn and wanted to try out with that. Also I want to avoid deep frying. So I have done this with shallow fry. It tasted so yummy. My kids had a spoon every time they pass by the kitchen. 
Ingredients:


For the batter :
  • Baby Corn – 16 cut into small pieces
  • Cornflour – 4 tablespoon
  • Maida – 1 tablespoon
  • Ginger – 1 teaspoon (finely chopped)
  • Garlic – 1 tablespoon (finely chopped)
  • Chat Masala – 1/2 teaspoon (Optional. I feel it gives nice flavour)
  • Red chilly powder- 3/4 to 1.5 teaspoon (According to your spice level) 
  • Salt – to taste
  • Oil – 1.5 tablespoon ( I have used olive oil)

For the manchurian:

  • Oil – 1 tablespoon
  • Capsicum – 1/2 Cup (cut into ½ inch squares)
  • Big Onion- 1 (finely chopped)
  • Soya sauce – 1 tablespoon
  • Tomato sauce – 3 tablespoon
  • Salt – to taste
  • Spring onions – 2 tablespoon
Method

Wash and cut the baby corn into 1/2 inch round pieces. Mix all in the batter section in a bowl and add water to mix into smooth thick paste. Add cut baby corn to it and leave it aside for 30 mins

Heat broader vessel ( I have used non stick pan) and add marinated Corn (just put corn alone. Batter will be used at later stage). Make sure you spread Corn. Each corn should spread spearately shouldn’t touch one another. Sprinkle oil on it. You can put oil in 3 patches (add oil let it cook for some time and turn the corn and add some more oil. Add oil at regular interval). Make sure you cook the corn in low flame. (if you want this to be done fast you can deep fry it). Once Corn is crisp switch it off and keep it aside.

Heat 2 teaspoon of oil in the kada. Add onion and fry it till it is soft. Add capsicum and fry till it is crisp now add Corn and mix well. Let it cook for another 30 sec. Add the Soya sauce, salt (we hv add salt for corn in corn itself) and tomato sauce. Mix well. Add remaining batter to it. And let it cook till it is crispy  in low/medium flame. Add oil at regular interval and gently turn corn and the batter. Add spring onion and mix well. Fry for 1 min and switch it off

This can be eaten as snack or as side dish to the fried rice

    Looks so delicious. I think addition of chaat masala to the mix will be very interesting. Wish I can find fresh baby corn here.
