Baby Corn Rice / Pulav / Pulao

Kids love variety rice over normal full meal with sambar, rasam etc.. My 2nd son is not a big fan of normal corn but he eats baby corn (not sure what’s the reason). These days kids are having lunch outside due to their long hours at school. So when we are at home I try to do the dishes they like. I have done this rice many times but just got the chance to click
Ingredients:


Rice (Basmathi Rice) – 1 Cup
Soya Milk – 2 Cups
Baby Corn – 20-23
Oil  – 1 tablespoon
Salt per taste
Bay leaf  – 1
Cinnamon -1 Inch
Cloves – 3-4


Roast in 1/2 teaspoon of oil and grind together


Red chillies – 2
Green Chillies – 2-4 (adjust to your spice)
Small Onion – 5 pieces
Garam Masala – 1/4 teaspoon
Mint Leaves – 1/4 Cup
Coriander – 1/4 cup
Garlic – 5-7 pods
Ginger – 1/2 inch
Grated Coconut – 2 tablespoon (optional I didn’t use it)



Method:



Wash and soak rice for 10 mins. Drain water completely and fry the rice in 1/2 teaspoon of oil. Fry till moisture fully absorbed

Slice the corn into 1/2 inch small circle. Add them to hot water and cover it for 15-20 mins

Heat the kada and add oil. When the oil is hot add bay leaves, cinnamom and cloves. Fry for 30 sec. Add grounded masala and fry till nice smell comes. Add baby corn, salt and rice. fry for 30 sec. Add soya milk and water ( i have used .5 cup of water) mix well. Transfer this to rice cooker and cook well. If you are using pressure cooker cook till 2 whistle.

Serve hot with your favourite side dish or raitha
