Almond Meal Cake

I got some almond flour left over after my almond cranberry cookies. So I was surfing the net for some recipe which uses almond flour. I found this in kothiyavunu space. She had it for almond meal muffin. I was too lazy so decided to do it as cake. It is butterless, oil less and eggless. It is also free from refine sugar. My kids enjoyed. Try it out and enjoy this guilt free cake

Ingredients:


Almond Meal – 1.25 cup
All Purpose Flour – 3/4 cup
Banana : 2 medium, mashed
Baking Powder – 1 teaspoon
Baking Soda : 1 teaspoon
Salt : 1/2 teaspoon
Honey :1/4 cup or replace with light brown sugar or maple syrup for Vegan
Milk : 1/2 cup (used low fat)
Water: 1/2 Cup
Apple Sauce : 1/3 cup /75g 
Almond / Walnuts : 1/2 cup (toastedchopped)– You can use your favourite nuts



Method : 


Preheat oven to 350ºF/180ºC.
Mash the banana and combine it with apple sauce

Grease the baking tray and sprinkle flour to it. Keep it aside.Chop the nuts and keep it aside

In a large bowl, sift and combine together almond meal, flour and salt. Keep it aside

In a separate bowl, combine milk, baking powder, baking soda and whisk till you get air bubbles. Add in mashed bananas, honey, apple sauce and mix well.


Add dry ingredients to wet ingredients in batches and mix till it is incorporated. Add in 1/2 of the chopped nuts

Pour batter into greased cake tin and sprinkle rest of the nuts on the top

Bake for about 20-25 minutes, or until a tooth pick comes out clean. Mine took about 25 mins
Allow to cool completely
Enjoy this guilt free cake
