Paneer Puff

This time when I was India my kids loved the paneer roll. They had it almost everyday. This weekend my son asked for it for snack. I told him I have puff pastry so I will do puff instead. He was ok with that. This is good after school snack for kids too
Ingredients:


Puff Pastry – 200g. You can use the puff pastry sheet also


For Stuffing


Carrot / Beans – 2 cups (cut into one inch pieces)
Tomato – 2 fineley chopped
Onion – 1 finely chopped
Potato – 1
Paneer – 1 cup
Garlic – 5 pods finely chopped
Cumin seeds – 1 teaspoon
Turmeric powder – 1/4 teaspoon
Sambar powder – 1 tablespoon
Flax Seed Powder – 1 tablespoon
Cashew  Nuts – 1 tablespoon
Coriander Leaves – 1 tablespoon (finely chopped)
Salt per taste
Oil – 1 tablespoon



Method:
Pressure cook Potato and peel the skin. Cut it into one inch pieces and keep it aside. Heat the Oil and when the oil is hot add Cumin seeds. When it start to crackle add garlic and fry till it is in light brown color. Add onion and fry till it is translucent. Add Tomatoes, salt and turmeric powder. When it turns mushy add Carrot/beans and close the lid till vegetables are cooked

Add Cooked Potato, Paneer, Sambar powder and mix well. Add More salt if required at this stage. Cook for another 2 mins

Add Flax Seed powder and cashew (no need to fry I used baked Cahew). Mix well and let it cook for another 3-5 mins. 

Switch  Switch off the flame and keep the stuffing aside



Thaw the pastry flour as per instruction on the package
Pre heat the oven at 180 degree
Spray non stick coating on the microwave plate and keep it aside

Take half inch pastry and roll it to desired shape. Keep 2 tablespoon of stuffing and close it as shown in the pic. Press with fork on the side to make sure it is closed properly.



Keep it on the prepared microwave plate and back it in microwave for 30-40 mins or till the puff is brown in color. Mine took ~40 mins

Enjoy it with your favourite chutney / sauce
