Snowball Cookies (Melting Moments Cookies)

I wanted to bake some Christmas cookies. Kids are at home on a holiday they love cookies. This is one of the easiest cookies to make and it really melts in your mouth. This recipe is adopted from Joy of baking. For original recipe click here

Ingredients:

1 1/2 cups (195g) all purpose flour
1/2 cup (60g) cornstarch(corn flour)
1/4 Teaspoon of Salt (skip if you you are using salted butter)
1/4 Cup (30g) Icing Sugar
1 Cup Unsalted butter
1/4 teaspoon Salt (skip this if you are using salted butter)
1 teaspoon of Pure Vanilla Extract
Topping
1/2 cup (60g)Powered or Icing Sugar
Method:
In a medium sized bowl shift together the flour, cornstarch and salt. 

In the bowl  beat the butter, Vanilla extract and sugar until creamy and smooth.

Add dry ingredients to wet ingredients and just bring it together. (If needed add few drops of milk). Cover and refrigerate the batter for 1-2.5 hours, or until firm. (it took 2.5 hours for me)

Preheat oven 180 degrees C. Line baking tray with parchment paper. Take marble (1 inch) size ball and place them on the parchment paper. Leave enough space between them. Bake it for 12-15 mins or till the edges are starting to brown. Let the cookies cool down for 3- 5 mins. 



Take the powdered sugar in a broader bowl. While cookies are still warm roll the cookies in the powdered sugar gently. allow it to cool down completely. Store it in air tight container. This stores well for couple of week. If preferred just before serving you can sprinkle more sugar
