Double Chocolate Chip Cookies

As any kids my kids are also big fan of cookies. After doing successful baking few times I am getting addicted to baking cookies / cakes. These days I am on non stop marathon of cookie baking. This recipe is something that I have experimented with mix of different ingredients.. It turned out perfect. Chocolate flavour of course kids loved it
Ingredients:

Unsalted butter – 1 Cup
Brown Sugar – 1 Cup
Sugar – 3/4 cup ( Optional I didn’t add because I wanted less sweetened version)
Chocolate Chips – 1/2 Cup ( I haveused semi sweeten chips)
Coco Powder – 2 tablespoon (I have used Hersley pure coco unsweetend one)
Eggs – 2  or 2 tablespoon of Flax seed powder mixed with 6 tablespoon of water

Vanilla Extract – 1 teaspoon

Oats – 1 cup
All purpose flour – 2 1/2 cup
Baking soda – 1/2 teaspoon
Lemon juice – 1 teaspoon
Salt – 1/2 teaspoon (skip if u are using salted butter)

Method:



Preheat the oven at 180 degrees

In a large bowl add room temperature soften butter with sugar (both white (if using) and brown). Beat till sugar is melted and the mixture is creamy. Add in Vanilla extract, Flax seeds mixture and lemon juice. Mix well.

In another bowl shift in flour, baking soda, coco powder, oats and salt. Add this to the wet ingredients slowly and mix well (I was so lazy I have added all the dry ingredients directly to the wet). Mix well. Add choco chips and mix well

Refrigerate the dough in the fridge for 1 hour

Take out the dough by hand and roll 1″ inch ball and flatten 


















Bake for 13-15 minutes (Mine has taken 15 mins) until golden brown around the edges. Cool completely on a wire rack and store it air tight container. 

Enjoy the cookie. I served with white chocolate frosting
