This is the first time I have done sweet sundal. When I was talking to my sister (who is preparing to keep golu) she was talking about this sundal. So wanted to try it. If you have sweet tooth try this sweeter version of sundal. I liked it.. It tasted great the next day.
Ingredients
Black eye bean / cowpeas – 1/2 cup
Jaggery – 1/3 cup
Cardamom powder – a generous pinch
Coconut pieces – 2-3 tablespoon
Ghee – 2 teaspoon
Salt – a pinch
Cover jaggery with little water, melt it, and filter it to remove any impurities.
Heat jaggery, add cardamom powder and a pinch of salt, when it starts boiling well, add the cooked bean and mix it well. Cook till there is no moisture. Fry Chopped coconut in ghee and add to the sundal. Mix well
Serve it hot or cold
Green gram dhal can be used in the place of black eye peas.
